Here's what you need to know about these savory berries.

Yummy magazine food editor Rachelle Santos gives us the basics about capers:
1. Capers are the pickled buds of the spiny caper bush native to the Mediterranean region.
2. When the bud is left to grow, it produces edible fruits called caper berries, which are also pickled and commonly eaten as an appetizer.
3. Some studies show that these tiny buds, especially when consumed with red meats, pack a big antioxidant punch, helping reduce the risk of cancer and heart disease.
4. Capers have a salty, piquant flavor with a pungent aroma, making them more of an acquired taste. But when added to dishes, they bring a refreshing, tangy flavor boost to rich food. They are widely used in pasta sauces such as Pasta Puttanesca; in dips and dressings; as toppings for pizza; and in sauces for fish, chicken and veal. They have even made their way to local cuisine, now a common addition to gourmet bottled tuyo.
5. Bottled capers can easily be found in the canned/bottled vegetable aisle of the supermarket.
6. Once opened, keep them refrigerated and submerged in brine. Consume within two weeks for peak quality. But when stored properly, they will remain good to use for about six months to one year.
