5 Recipes for a Homey Italian Buffet

"The heart and soul of Italian cuisine is simplicity and use of ingredients with outstanding quality," says Margarita Fores of Cibo and Pepato fame. All the recipes she shares with us use only two or three very vital ingredients and are amazingly simple to prepare. "They bring back many memories of my  first stay as a student in Italy 20 years ago, in the fall of 1987, where I was full of wonder and eagerness to immerse myself in everything Italian."

1 pack 500-grams dry semolina spaghettini

250 ml bottle of Extra Virgin Olive Oil

Marsala wine

200 grams biscotti or any other crunch cookie, crumbled

100 grams raisins
Brown sugar

Rock salt

Ground pepper

1 whole chicken

1 1/2 kilos lughanighe (Italian-style sausage) or any flavorful, lean sausage

800 grams mixed greens

2 bunches sweet basil

1 head garlic, crushed, then chopped finely

3 whole lemons

8 whole apples, medium-sized

1 1/2 kilos grapes, preferably seedless

1 wedge Parmigiano cheese

250 gram bar of butter

Recreate the Look

For that homey touch, use dishware you've got on hand. Better yet, rummage through your parents' or grandparents' stash. Margarita found these French plates that belong to her mother Baby Fores just sitting in a garage! Who knows what treasures you might find in your garage or basement? For an Italian countryside feel, set up the buffet in your lanai or garden.
