There are other delicious ways to enjoy mango, our national fruit, aside from eating it as is—raw, ripe, or even dried. Mangoes, which also happen to be the national fruit of Pakistan, India, and Bangladesh, add a distinct sweetness or sourness to salads or main dishes.     Mango-adobo

    1 kilo chicken (adobo cut)
    1 clove garlic
    1/4 c cup vinegar
    1/4 cup soy sauce, may add as desired
    black pepper corns
    a teaspoon sugar, may add more as desired
    1 whole ripe mango, diced

    Marinate chicken in vinegar, toyo, garlic, peppercorns. After 30 minutes to 1 hour, simmer chicken until tender. May add more soysauce and sugar, as desired. Final touch..add diced mango and simmer for 5 minutes more...
