Veggie Good

A dozen recipes to get your family excited about eating vegetables.

By: Yummy

Getting the family to eat vegetables can be quite a chore. You can go on and on about their importance to health and well-being, but there's no way you can encourage them to eat if they don't like what's on their plate.  So why don't you fix the vegetables in ways that the family will enjoy?  Get creative to make sure they get their five servings each day.

Put them in a soup! This Meatless Chili Soup has tomatoes, beans, carrot, corn, and celery. Serve with Tortilla chips for an added fun Mexican touch. Make it!
Have fruit and veg in one bowl! This Carrot-Apple Soup with Crumbled Bacon is usually made during fall in temperate regions when apples are abundant. Children will love its sweet, savory, and rich flavor. Try it!
Give them variety! This chunky Pesto Minestrone has red kidney beans, white cannellini beans, carrots, tomatoes, celery, eggplant and zucchini. It's loaded with fiber, potassium, folate and Vitamin A. Make it today!
Make it fresh! This Native Weeds Salad uses herbs that grow wild in most gardens and is tossed with lettuce, french beans, carrot, and cucumber. Pansit-pansitan is believed to help relieve rheumatic pain and gout. Try it!
Give it a twist! Give them a light and healthy alternative to mayo-laden coleslaw. This Asian Slaw is low in fat but full of flavor. Make it!
Keep them crisp! Maintain the crunchy texture of vegetables like in this Steamed Asparagus with Buttered Garlic Crumbs. Enjoy as an appetizer, side dish or alone. Try it!
Top it! Top the Zucchini Pudding with whole wheat crackers for an exciting snack. Have it today!
Bake it! Put vegetables in a pizza for a light and crunchy snack. This Green Pizza has arugula, loaded with vitamins and minerals. Make some today!
Spice them up! Add a little heat to chickpeas and spinach for an exciting side dish. This one is loaded in protein and iron. Make it.
Cook it quick! Stir-frying is one of the best ways to cook your vegetable as it preserves their texture and flavor. This Mushroom and Veggie Stir-Fry has a variety of sweet, crunchy vegetables that would go well with rice or noodles. Try it.
Cook it in gravy! The classic pot pie gets the no-meat treatment. This Vegetable Pot Pie is filled with corn, carrots, peas, green beans and mushrooms. Do it.
Put it in pasta! This vegetarian lasagna is a healthy alternative to the regular meat-based recipe. Add thinly sliced zucchini to it and it will be even tastier and more nutritious. Try Solimar's Egglpant Lasagna.
