Lawrence Baribar's  Tomato Wine Sauce

Butter

Onion

1 Melt  the butter in frying pan, Then fry the onion and garlic.Put the tomato sauce and boil it. Add the wine and let it simmer for 2 hours.

Nilo Baranda's  Flaming Kriss Satay Sauce

100g crunchy peanut butter
2 pcs. sili labuyo
100g creamed coconut
One small onion
1 tablespoon of calamansi juice
+/- 1 teaspoon of chilli powder, to taste
1 tablespoon soy sauce
150ml water, as needed
2 teaspoons of peanut oil

1 Finely chop the onion and fry it in the peanut oil until soft.
2 Stir in the peanut butter and chilli powder, gradually adding some of the water.
3 Now add the creamed coconut, and stir continuously whilst it dissolves. Continue to heat for about five minutes and keep stirring. Add more water if the sauce is becoming too thick.
4 Finally, stir in the soy sauce, sili labuyo and calamansi juice and heat for a further minute.

Dash Estefani's  Chicken & Cheese Hot Dip

1/2 kg chicken breast fillet
1 (8 oz) bottle ranch dressing
2 packages cream cheese, softened
1 (12 oz) bottle hot sauce
1 (16 oz) package shredded Cheddar cheese

1 Preheat oven to 350 degrees F
2 Heat a nonstick pan to medium. Add chicken breast and cook until juices run clear, about 4 minutes per side. Remove and let cool completely. Shred the meat into strands.
3 Pour the ranch dressing, cream cheese, and hot sauce into a bowl and mix well. Add the shredded chicken and mix again. Spread the mixture into a 9x13 inch baking dish. Sprinkle the Cheddar cheese on top of the chicken mixture.
4 Bake until the cheese is bubbling, about 10 minutes.


Richard H. Mamuyac's  Mushroom Kaboom

a can of sliced mushrooms
chili pepper (chopped)
1/2  pint of milk
1/2  oz (15 g) of butter
1 heaped tbsp of flour
olive oil
salt

1 Heat a little olive oil and melt the butter in it.
2 Add the mushrooms and chili pepper and saute until the mushrooms are soft and dark in color.
3 Remove the pan from the heat and set aside.
4 Add the flour and pour in the milk.
5 Mix the ingredients together, stirring continuously.
6 Return the pan to a medium heat and cook the sauce, stirring constantly until it thickens.
7 Season with salt and cook for 5 - 8 mins.
8 Serve hot and dunked your buffalo wings in it


Jeremy Salvan's Mango Habanera Sauce

1 tablespoon Vegetable Oil (you can also use peanut oil)
4 Philippine Mangoes peeled and diced
1/4 cup Onion chopped
1 Dried Habanero Chili (or subsitute that is closer to its hotness)
1/4 cup Lemon Juice
1/4 cup Ketchup
3 tablespoons Sugar, Salt and Pepper
 
1 Heat oil in a small saucepan, add mangos, onions, and habanero chile.
2 Cook until onions are soft and translucent.
3 Add lemon juice, ketchup, and sugar, stirring till mixture comes to a boil.
4 Reduce heat and simmer for 30 minutes. Remove from heat, let cool.
5 Blend in blender till smooth consistency. Season with salt and pepper.
