Snickerdoodles Recipe

Is there anything more festive than the scent of cinnamon wafting through your home? Snickerdoodles are soft, buttery, chewy cookies that are coated in a mix of cinnamon and sugar. This cookie recipe is simple, homey, and easy to make.

 

Yield: 2 ½ dozen cookies

 

2 ½ cups all-purpose flour, sifted

½ teaspoon baking soda

½ teaspoon sea salt

1 cup salted butter, softened

1 ½ cups dark brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

5 tablespoons white sugar

1 tablespoon cinnamon

 

1  In a medium-sized mixing bowl, sift the flour, baking soda, and salt together. Set aside.

 

2  In a large mixing bowl, cream the butter and sugar together until light and fluffy. Add the eggs and vanilla and beat until light and fluffy.

 

3  Add the flour mixture and mix on low speed until just combined. Preheat your oven to 350 °F. Refrigerate the dough for 20 minutes.

 

4  In a shallow dish, combine the cinnamon and white sugar. Scoop the dough by 2 by 2-inch balls and roll into the cinnamon-sugar mix until full coated. Place on a baking tray lined with parchment paper and flatten slightly. Place the cookies at least 2 inches apart.

 

5  Bake for 20-22 minutes or until the dough bounces back when lightly touched.

 

 


Dark Chocolate Peppermint Cookies

Peppermint and chocolate is a classic Christmas flavor combo—use it in your cookies! These cookies are rich, indulgent, and smell so good! Remember to use the best dark chocolate that you can afford, it makes all the difference.

 

Yield: 2 ½ dozen cookies

 

2 cups all-purpose flour, sifted

3/4 cup bread flour, sifted

1/4 cup cocoa powder, sifted

½ teaspoon baking soda

½ teaspoon sea salt

1 cup salted butter, softened

1 ½ cups dark brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

½ cup dark chocolate, melted and cooled slightly

¼ teaspoon peppermint oil

1 ½ cups dark chocolate chucks or semi-sweet chocolate chips

 

 

1  In a medium-sized mixing bowl, sift the flours, cocoa powder, baking soda, and salt together. Set aside.

 

2  In a large mixing bowl, cream the butter and sugar together until light and fluffy. Add the eggs and vanilla and beat until light and fluffy. Add the melted chocolate and peppermint oil and beat until fully incorporated.

 

3  Add the flour mixture and mix on low speed until just combined. Fold in chocolate chunks or chips. Preheat your oven to 350 °F. Refrigerate the dough for 20 minutes.

Royal Icing Recipe

Remember to use fresh, organic egg whites when making royal icing. You can always adjust the amount of sugar to get the consistency that you want. Pipe them onto ready-made or store-bought sugar cookies to save yourself some prep time. 

 

Yield: Around 1 cup

 

1 egg white

1 1/3 cups powdered sugar, sifted

Food coloring

 

1  Combine all the ingredients into a bowl and fill into a piping bag fitted with an icing tip.
