VANILLA BREAD PUDDING

This hearty pudding exudes warmth and comfort. INGREDIENTS: 

Butter for greasing

5 eggs

3 cups Arla Milk Goodness Full Cream Milk

1 cup sugar

1 cup all-purpose cream

1 teaspoon vanilla extract

½ teaspoon salt

8 slices bread, cut into 1-inch pieces

 

FOR THE VANILLA SAUCE

3 egg yolks

3 tablespoons sugar

1½ cups Arla Milk Goodness Full Cream Milk

1 teaspoon vanilla extract

 

PROCEDURE:

1.  Grease baking dish with butter.

2.  Whisk eggs in a large bowl. Add milk, sugar, cream, vanilla, and salt. Stir in bread.

3.  Pour into baking dish. Cover with cling wrap and refrigerate for at least 2 hours.

4.  Preheat oven to 350°F.

5.  Bake pudding for 30 to 40 minutes or until top is golden. 

Make the vanilla sauce:

1.  Whisk egg yolks and sugar together.

2.  In a saucepan over low heat, heat milk to a simmer. Slowly pour a small portion of milk into the egg and sugar mixture. Whisk immediately. Slowly add the rest of the milk and whisk to combine. 

3.  Transfer mixture back to the saucepan and stir over low heat until it thickens, about 2 to 4 minutes. Mix in the vanilla. The sauce must be thick enough to coat the back of a spoon.

4.  Serve bread pudding with the vanilla sauce on the side.

 

Yummy tips: Use ensaymada instead of plain bread for a delicious Pinoy take on bread pudding. You can tweak the recipe by adding nuts, raisins, cinnamon, chocolate chips, and even fruits such as canned peaches, mango, banana, and pineapple.

 

 

 

SEAFOOD CHOWDER

2 large potatoes, diced

2 (200-gram) white fish fillets, cut into 2-inch pieces

1 kilo clams or mussels, cleaned

Salt and pepper, to taste

Parsley and croutons for garnish (optional)

 

PROCEDURE: 

1.  Heat oil in a pot over medium heat. Add the onions, garlic, and celery. Sauté until fragrant. 

2.  Add broth, bay leaf, and potatoes. Let simmer for 15 minutes or until potatoes can easily be pierced with a fork.

3.  Add the fish. Let cook for 5 minutes.

4.  Add the milk and clams. Let liquid simmer, not boil, until the clams open. Discard shells that remain closed.

5.  Season with salt and pepper to taste. 

6.  To serve, sprinkle with chopped parsley and top with croutons if desired.

CHICKEN AND BROCCOLI PASTA

2 large heads broccoli, chopped into florets

PROCEDURE: 

1. Cook pasta according to package directions. Drain. Set aside.

2. Heat butter in a pan placed over medium heat. Saute onions and garlic until fragrant. 

3.  Add chicken and cook for 4 minutes on each side or until cooked through. Remove from pan. Slice into 2-inch cubes once cool enough to handle.

4.  Add broccoli, milk, thyme, lemon zest, cayenne, salt, black pepper. Let it simmer for 2 minutes. 

5.  Add the chicken and the Arla cheese. Mix to combine.

6.  Add the pasta and mix to make sure the noodles are coated in sauce. 

7.  To serve, sprinkle with parsley and more Arla mozzarella cheese.
