The perfect side to go with that perfect holiday roast has got to be mashed potatoes. Whether you like them light and fluffy or rich and creamy, mashed potatoes is a side worth celebrating.

I boil equal amounts of cauliflower and potatoes. It’s the only way my son used to eat cauliflower! Mashed it with a teaspoon of butter, a teaspoon of baking powder to make it fluffy, and some milk until it reached the correct consistency. – Odette Ryan
