Serves 6 Prep Time 10 minutes
1 big can garbanzos, reserve 1/2 cup of liquid
1 teaspoon minced garlic
2 teaspoons calamansi juice
salt and pepper
1 tablespoon sesame oil
paprika
3 pieces pita bread
1 Purée drained garbanzos with 1/2 cup liquid from the can, minced garlic, and calamansi juice.
2 Season with salt and pepper to taste. You can add more liquid (from the can) if you want to adjust consistency.
3 Add sesame oil and purée again.
4 Pour into a bowl (or use ramekins or shot glasses for individual servings). Sprinkle paprika on top.
5 Grill or toast pita bread. Cut into triangles. Serve with hummus dip.
Tasting tip Some prefer hummus to be more garlicky, citrusy, or bland. Adjust the balance of garlic, calamansi, salt and pepper, to suit your taste.
