Apple and Cranberry Stuffing




Serve it as a side dish to Oven-Roasted Pork Loin during special occasions


Serves 6 to 8  Prep Time 20 minutes  Cooking Time 10 minutes

 

1/4 cup chopped onions
1/4 cup chopped celery
1/4 cup chopped carrots
2 tablespoons butter
1 tablespoon extra virgin olive oil
8 apples, small dice
1 cup dried cranberries
1 teaspoon dried thyme
salt and freshly ground black pepper
1/2 cup apple juice

 

In a heavy-bottomed pan, sauté onions, celery, and carrots in the butter and olive oil. Add the apples and the rest of the ingredients; sauté for about 5 minutes until apples are tender. Keep the stuffing in a sealed container for reheating the next day.
