This elegant and delicious side dish is incredibly simple to make. When you’re up for a splurge, make it more special by substituting bacon with prosciutto.
Yield 8 pieces Prep Time 5 to 10 minutes Cooking Time 12 to 15 minutes
1 to 2 bunches of asparagus (or 32 spears), cleaned and trimmed
8 bacon strips
Olive oil for drizzling
Sea salt and freshly cracked
Black pepper
1 Gather 4 asparagus spears and wrap one strip of bacon around the bunch making sure all spears lay flat. Repeat with the rest of the asparagus.
2 Line wrapped asparagus bunches on a baking tray. Drizzle with olive oil and season with salt and pepper.
3 Place in a preheated 180ºC oven for 12 to 15 minutes or until asparagus is tender and bacon is crispy.
