This filling grab-and-go brekkie is for the always-on-the-go set.
6-inch soft or crusty bread roll
1 tablespoon mayonnaise
1 tablespoon mustard
beef pastrami slices
cucumber
tomato slices
red onion rings
olive oil
salt and pepper
shaved mozzarella
1 First, grab a 6-inch soft or crusty bread roll (try a baguette, rye, or multigrain bread) and slice horizontally in half.
2 Spread 1 tablespoon mayonnaise on the inside of 1 bread slice and 1 tablespoon mustard on the other.
3 To assemble: Top a bread slice with 3 to 4 cooked beef pastrami slices, cucumber and tomato slices, and red onion rings.
4 Drizzle with a small amount of olive oil, and season with salt and pepper. Top with shaved mozzarella and the remaining bread slice. Cover in plastic wrap and bring as baon.
Time-friendly tip: Make this sandwich the night before, place in the fridge, and grab in the morning. Not a fan of cold sandwiches? Just heat in the toaster for 3 to 4 minutes or zap in the microwave for 20 to 30 seconds.
