In preparing this easy to cook dish, use good-quality beef in cuts that are ideal for roasting like striploin, tenderloin, or porterhouse.
Serves 3 to 4 Prep Time 10 minutes Cooking Time 15 minutes
500 grams choice cut beef
1 tablespoon mustard
1 teaspoon each salt and coarse ground black pepper
250 grams marble potatoes
(or regular-sized potatoes cut into even sized chunks, preferably with skin on)
1 cup onions, sliced
extra virgin olive oil for drizzling
1 Brush the meat with a thin layer of mustard and season well with salt and pepper.
2 Toss the potatoes and onions with olive oil. Place on a heatproof plate that will fit inside a turbo oven. Place the meat on top and cook for around 15 minutes for medium finish.
3 Take out of the oven and transfer to serving dish.
Easy clean-up tip When we made this dish, we set the beef, potatoes, and onions on a simple wire rack topped with a double layer of foil. Easy clean-up!
