A home-style Cajun rice which goes well with grilled or fried meats such as pork chops. Serve with the Oh-So-Tender Chops.
Serves 4 to 5 Prep Time 10 minutes Cooking Time 5 minutes
2 tablespoons vegetable oil
1/2 cup salted butter
3 shallots, minces
4 cloves garlic, minced
1 tablespoon salt
1/2 teaspoon pepper
1 tablespoon Cajun powder
1/2 cup tomato, seeded and chopped
1/2 cup chopped red bell pepper
5 cups cooked rice
1 Heat vegetable oil in wok. Add butter and shallots. Stir for 2 minutes.
2 Add garlic, salt, pepper, and Cajun powder. Then add tomato and bell pepper. Stir for 1 minute.3 Add cooked rice. Mix till evenly coated. Serve hot.
