The ultimate dish in way-too-easy cooking, and a sure-ball favorite among the kiddies.
Serves 4 Prep Time 5 minutes
Cooking Time 15 minutes
2 tablespoons olive oil
1/3 cup chopped white onions
2 cups of rice uncooked
2 tablespoons white wine (optional)
3 chicken breast fillets,
skinless and cut into strips
1 can of cream of mushroom soup plus 1 can of water
For garnish
shaved Parmesan cheese
chopped parsley
1 In a pan, heat olive oil and sweat the onions until transluscent. Add the rice and coat evenly with oil.
2 Add the wine and chicken breast slices.
3 Pour in the mushroom soup mix and cook, stirring until rice is al dente or to the teeth (slightly hard but not overly so).
4 Serve on warm bowls with Parmesan cheese shavings.
Tip: Cream of mushroom soup is the key ingredient here, so use good quality canned varieties like Campbell’s. This can also be served using pork, squid, or fish fillets.
