Choco-Berry Mochi Balls

Choco-Berry Mochi Balls

These chilled rice balls make for a fantastic dessert.

6 1-tablespoon balls Smuckers strawberry jam
chocolate spread
2/3 cup water
1/4 cup sugar
1 cup glutinous rice flour
sweet potato starch for dusting

1  To make the filling, roll six 1-tablespoon balls of Smuckers strawberry jam. Wrap each with chocolate spread; roll again. Chill for 20 minutes.

2  To make mochi: In a microwaveable bowl, mix the water, sugar, and glutinous rice flour. Microwave for 2 minutes, stirring mixture every 30 seconds. Remove mochi from bowl and divide into 6 pieces. Dust a flat pan with sweet potato starch and flatten each piece of mochi. Wrap mochi around the chocolate-strawberry balls. Chill until ready to serve.
