Want to lose weight the healthy way? Include lots of fiber-rich foods in your diet—they make you feel full and satisfied longer. They also help regulate blood sugar levels so you won’t have a sudden craving for sweet and high-calorie foods.
Serves 8 Prep Time 10 minutes, plus overnight soaking Cooking Time 40 minutes
For the beans
1 cup white beans
water
salt
2 tablespoons olive oil
2 smoked chorizo, sliced diagonally
1 onion, chopped
1 tablespoon garlic, chopped
2 tomatoes, chopped
1/2 cup water
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1 Prepare the beans: Soak beans in water overnight. Wash and drain beans the next day. Cover beans with water and add some salt.
2 Bring to a boil and cook until beans are tender. (To save time, cook beans in a pressure cooker.)
3 Pan-fry chorizos in a skillet over medium heat.
4 Remove chorizos and add the onions and garlic.
5 Sauté until light brown and stir in tomatoes.
6 Stir in cooked beans, water, salt, and pepper.
7 Bring to a simmer and cook until beans absorb the liquid, about 10 minutes.
