Known as pain perdu in France, French toast is said to have been invented by Joseph French, an American. It was a way to make day-old bread appetizing. Often served for breakfast or brunch, it can be topped with fresh fruits.
Yield 3 to 4 servings
1 large egg
1/2 cup fresh milk
2 teaspoons maple syrup
1/4 teaspoon vanilla
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon butter
4 slices white bread, cut into diagonals
1/4 teaspoon cinnamon sugar
1 In a mixing bowl, combine the egg, milk, maple syrup, vanilla, nutmeg, and salt. Beat lightly.
2 In a nonstick pan, place a generous amount of butter. Just before frying, dip the bread slices into the egg mixture, one at a time, making sure both sides are well coated. Let excess coating drip off. Brown the toast well on both sides. Sprinkle with cinnamon sugar.
3 Serve with maple syrup and eggs sunny-side-up.
Tip: If you're rushing every morning, try freezing your French toast! After dipping the bread in the egg mixture, place them in a wax-paper-lined flat dish and freeze. When frozen, wrap individually wrap them in plastic or foil. Before serving, preheat oven to 400ºF, unwrap the bread, place on a baking sheet, and bake for 5 minutes or until done.
