Deli Bites

Whether sweet or savory, these mini sandwiches are tea-party must-serves.

Makes 8

Prosciutto with Kesong Puti Sandwich

4 slices white or whole wheat bread
prosciutto
kesong puti
cantaloupe or melon
1/2 tablespoon honey

1 Gather 4 slices white or whole wheat bread.
2 Take 2 and sandwich slices of prosciutto, kesong puti, and cantaloupe or melon.
3 Drizzle with 1/2 tablespoon honey. Repeat procedure with the remaining bread.
4 Cut each sandwich into quarters.


Tarragon-Crabstick Sandwich

2 slices of malunggay or white bread
1/2 cup chopped crabstick or kani
2 tablespoons bacon sandwich spread
1 teaspoon lemon juice
1/2 teaspoon lemon zest
salt and pepper to taste

1 Cut into quarters 2 slices of malunggay or white bread, and set aside.
2 In a bowl, mix together 1/2 cup chopped crabstick or kani, 2 tablespoons bacon sandwich spread, 1 teaspoon lemon juice, and 1/2 teaspoon lemon zest; season with salt and pepper to taste.
3 Top bread quarters with crabstick mixture, and garnish with almond slices, lemon quarters, and tarragon leaves. Serve open-faced.
