Fig & Pine Nut Pizza




This dessert pie is so good you’ll want to have it whether it’s hot or cold.

 

pizza dough (see recipe)
1 tablespoon olive oil
1/4 cup ricotta cheese
4 ounces fontina cheese, cut into 1/2-inch pieces
6 fresh sage leaves, torn into pieces
3 pieces dried figs, sliced and soaked in hot water
1/4 cup freshly grated Parmesan cheese
1 tablespoon honey
2 tablespoons pine nuts

 

1  Roll out the pizza dough into a circle or any desired shape.

2  Dust the baker’s peel with all-purpose flour or cornmeal.

3  Brush the dough with olive oil. Spread the ricotta cheese, leaving a ½-inch-border all around. Sprinkle the fontina and sage. Arrange the fig slices on top. Sprinkle with half of the Parmesan cheese and drizzle with honey and pine nuts.

4  Using a baker’s peel, slide the pizza onto the prepared baking stone.

5  Bake the pizza in the center of the oven (preheated at 5ooºF for 30 minutes before baking) for 10 minutes or just until the crust is browned. Cut into wedges and serve immediately.
