Chef Jun Jun de Guzman says this sandwich is comfort food for him, ever since he invented it seven years ago in a gourmet sandwich class. All his 15 classmates enjoyed every bite! Though it’s gourmet, the four cheeses in the sandwich are readily available in leading supermarkets.
Serves 3 to 4 Prep Time 20 to 30 minutes Grilling Time 3 minutes
For the Fresh Mushroom Sauté
1 tablespoon butter
1/2 onion, sliced thinly
150 grams sliced fresh button mushrooms
salt and freshly ground pepper
For the sandwich
3 to 4 pieces foccacia bread
4 slices gruyere cheese
4 slices Parmesan cheese
100 grams blue cheese, crumbled
100 grams Bel Paese, crumbled
3/4 cup fresh mushroom sauté
1 Heat pan with butter, and cook onion slices until translucent. Add sliced button mushrooms. Season with salt and pepper. Cook until liquid is released. Use as directed.
2 Assemble the sandwich: Slice each foccacia into two pieces. Lay a slice of each of the cheeses and add bits of blue cheese and Bel Paese. Put fresh mushroom sauté on top and cover with the other foccacia slice.
3 Place assembled sandwich into a panini or sandwich grill and heat for 3 minutes. Serve warm.
