Serves 4 Prep Time 10 minutes Cook Time 15 minutes (includes heating broth to a simmer)
6 to 8 cups chicken broth
1 pack fresh oyster mushrooms
1 pack fresh baby corn, sliced into rounds
olive oil
salt and pepper to taste
1 In a stockpot, heat chicken broth to a simmer.
2 In a pan, sauté oyster mushroom and baby corn in olive oil until cooked.
3 Add cooked mushrooms and corn to the chicken broth. Simmer for 2 more minutes. Season with salt and pepper.
