Garlicky Deep-Fried Snapper



Garlicky Deep-Fried Snapper

Give the usual fried fish a sharp flavor with some crushed garlic.

ServesPrep Time 10 minutes  Cooking Time 5 minutes

 

2 cups oil
1 whole snapper (cleaned) or 2 fillets
4 cloves of garlic, thinly sliced
2 tablespoons brown sugar
1 tablespoon light soy sauce

For the sauce
2 small chilies
3 garlic cloves
1 teaspoon brown sugar
5 tablespoons fish sauce
3 tablespoons lime juice

 

1  Heat oil in wok and deep-fry the snapper until golden and crispy. Remove from oil and drain.

2  In 2 tablespoons of oil, fry sliced garlic until golden. Add brown sugar and soy sauce.  Place fish on serving plate and top with fried garlic if desired.

Prepare the sauce: Pound the garlic and chili using a mortar and pestle. Combine with sugar, fish sauce, and lime juice.
