An easy, toss-everything-together chicken recipe! You can grill the chicken on a flat nonstick pan if you don’t have a stovetop griller.
Serves 4 Prep Time 10 minutes Cooking Time 10 minutes
1 chicken breast fillet
salt and pepper
3 tablespoons olive oil
3 tablespoons lemon or calamansi juice
2 cups cooked red rice
1 cup frozen mixed vegetables, thawed in the microwave for 30 seconds, then drained
1 Season chicken breast with salt and pepper, and baste both sides with olive oil. Grill until done. Set aside.
2 In a bowl, mix olive oil and calamansi juice. Toss red rice and vegetables in this mixture.
3 Transfer rice to a platter and place grilled chicken on the side.
