Her approach: veer away from processed foods and always make an effort to prepare healthier meals. In her quest, Mel whipped up with this version of a favorite breakfast. Try them tomorrow morning!
Yield 10 to 12 medium-sized pancakes Prep Time 15 minutes Cook Time 15 minutes
1 cup organic wheat bran
1/2 cup uncooked oatmeal
1/2 cup wheat flour
3 teaspoons baking powder
2 eggs
3/4 cup milk
1/4 cup water
1/2 cup sugar (or less, if desired)
1/4 canola oil
1 In a bowl, combine wheat bran, oatmeal, and wheat flour. Add baking powder.
2 In another bowl, beat eggs while adding milk, water, and sugar.
3 Stir in the dry mixture and add canola oil. Mix well.
4 Pour the pancake batter into a lightly greased skillet. Cook until lightly browned. Flip to cook the other side.
5 Top with fruit slices—like apples, strawberries, or bananas—and serve. Sprinkle with confectioners’ sugar if desired.
