Homemade Peanut Brittle Parfait



Homemade Peanut Brittle Parfait

Peanut brittle is yummy enough to eat on its own, but serving it with ice cream will put any sweet tooth on cloud nine.

Serves 4 to 5  Prep Time 5 minutes  Cooking Time 27 minutes

 

1 cup sugar
1/3 cup corn syrup
1 cup water
1 cup roasted peanuts, chopped
1 teaspoon vanilla
2 tablespoons butter
1 teaspoon baking soda

On the side
vanilla ice cream
chocolate ice cream
fresh bananas
chocolate syrup

 

1   In a saucepan, combine sugar, corn syrup, and water. Bring the mixture to a boil. Cover the saucepan and cook for 5 minutes.

Swirl the pan to make sure the sugar dissolves. Add the peanuts and stir constantly. Continue cooking on medium heat until syrup is golden brown, about 15 minutes.

3  Remove from flame and add the vanilla, butter, and baking soda. Stir until well blended and foamy.

4  Pour the peanut mixture into a lightly oiled baking sheet pan. Leave it to cool for 1 hour, then break the brittle into shards.

Assemble in a parfait glass with alternating layers of vanilla ice cream, chocolate ice cream, and fresh chopped bananas. Garnish with chocolate syrup.
