Peanut brittle is yummy enough to eat on its own, but serving it with ice cream will put any sweet tooth on cloud nine.
Serves 4 to 5 Prep Time 5 minutes Cooking Time 27 minutes
1 cup sugar
1/3 cup corn syrup
1 cup water
1 cup roasted peanuts, chopped
1 teaspoon vanilla
2 tablespoons butter
1 teaspoon baking soda

vanilla ice cream
chocolate ice cream
fresh bananas
chocolate syrup
1 In a saucepan, combine sugar, corn syrup, and water. Bring the mixture to a boil. Cover the saucepan and cook for 5 minutes.
2 Swirl the pan to make sure the sugar dissolves. Add the peanuts and stir constantly. Continue cooking on medium heat until syrup is golden brown, about 15 minutes.
3 Remove from flame and add the vanilla, butter, and baking soda. Stir until well blended and foamy.
4 Pour the peanut mixture into a lightly oiled baking sheet pan. Leave it to cool for 1 hour, then break the brittle into shards.
5 Assemble in a parfait glass with alternating layers of vanilla ice cream, chocolate ice cream, and fresh chopped bananas. Garnish with chocolate syrup.
