The sweetness of this salad comes from the melons so be sure to pick ’em fresh and ripe. Though sweet, honey is just part of the dressing and is used only to highlight the freshness of the fruits.
Serves 4 Prep Time 5 minutes
ready-to-use salad greens
half a ripe melon, chopped
2 lemons, sliced into rounds
olive oil
Ilog Maria honey or any pure,unadulterated honey
salt and pepper
1 In a bowl, toss together salad greens, melon chunks, and sliced lemons.
2 In another small bowl, mix together olive oil and honey. Drizzle this mixture over the salad. Squeeze a little lemon juice if desired. Season with salt and pepper.
