Lechon Wraps



Lechon Wraps

Tired of paksiw na lechon? These wraps are much simpler to make, and lighter to boot—a welcome respite from heavy  meals.


ServesPrep Time 10 minutes

 

3 cups leftover slow-roasted pig or lechon, cut into strips
1 small bunch lettuce, curly or arugula
4 stalks spring onions
hoisin, barbecue, or mayo-mustard (equal parts mayonnaise and mustard, plus honey to taste)
8 small tortilla wrappers

 

1  Slice leftover lechon into strips. Heat in the microwave oven or in a toaster oven.

  Lay strips of lechon on a tortilla wrapper. Add either curly lettuce (best matched with the mayo-mustard sauce) or a stalk of spring onion (best paired with the hoisin sauce). Add sauce. Wrap and enjoy! Using barbecue sauce? Pair it with arugula leaves.

Lechon leftover tip
Another way to use leftover lechon: Make lechon siopao! Just buy siopao bun mix and use chopped lechon moistened with lechon sauce as filling.
