The refreshing mango complement the chicken breast perfectly!
Serves 2 Prep Time 5 minutes Cooking Time 7 minutes
1 tablespoon olive oil
1 small white onion, chopped
2 cloves garlic, minced
1 teaspoon minced ginger
400 grams chicken breast fillets, sliced into 3-inch long pieces
2 tablespoons mango jam
1 tablespoon balsamic vinegar
salt and pepper to taste
2 (6-inch) focaccia loaves
6-8 romaine lettuce leaves, washed and patted dry
flesh of 1 mango, sliced into strips
1 Heat olive oil in a pan and quickly sauté the onions, garlic, and ginger.
2 Add the chicken and sauté for 30 seconds.
3 Spoon the mango jam into the pan and mix with the chicken. As the jam liquefies, add the balsamic vinegar. Make sure the chicken is well-coated in the jam and vinegar mixture. Season with salt and pepper to taste, then remove from heat.
4 Using a serrated knife, slice the ciabatta in half lengthwise. Toast lightly.
5 Assemble the sandwich: Brush the halves with olive oil. Place lettuce, chicken, and mango strips on one half, then top with the other half.
