Chicken is the most versatile of proteins. The roasted chicken from the supermarket can be any busy cook’s best friend. This pasta dish is the best for a packed lunch because it’s yummy even at room temperature. Spend a little on good-quality Parmesan cheese—a little goes a long way.
Serves 1 to 2 Prep Time 10 minutes Cooking Time 5 minutes
2 tablespoons extra virgin olive oil
2 cloves garlic, minced
1 cup roasted chicken meat, shredded
pinch of chili flakes (optional)
salt and pepper to taste
2 cups cooked pasta of your choice
10 basil leaves, washed well
Parmesan cheese for topping
1 In a shallow pan, heat olive oil with the garlic. Add in chicken and chili flakes, and cook until fragrant. Season well with salt and pepper.
2 Toss in pasta and warm through. Add the basil leaves.
3 Top with shaved Parmesan cheese.
