Seafood with Pesto




This is an excellent (and easy!) dish that can be served during dinners with V.I.P. guests (read: mother-in-law, boss, or soon-to-be boyfriend).


ServesPrep Time 15 minutes  Cooking Time 2 minutes

 

10 pieces tiger prawns, peeled and deveined
10 pieces squid, ink removed
10 pieces kani or artificial crab meat
2 tablespoons white wine
4 tablespoons good-quality,store-bought pesto
1 tablespoon extra virgin olive oil
1 tablespoon minced garlic
salt and pepper to taste

 

Toss all ingredients in a microwave-proof bowl, and microwave for around 2 minutes or until the shrimps turn pink and start to curl. Serve immediately with some lemon slices on the side.

Cooking tip When using the microwave, better to err on the side of caution—under cook the seafood rather than risk it turning rubbery. Serve this with good-quality crusty bread (this is a delicious choice for the health-conscious), as a topping to pasta, or even as an appetizer.
