A simple and easy appetizer that makes for an impressive start to any party.
Makes 24 pieces
3 cloves garlic
1/2 cup extra virgin olive oil
1/4 teaspoon salt
French baguette slices
cooked chicken breast (shredded or cut into strips)
grape halves
grated cheese (Fontina, Port Salute, or Monterey Jack)
1 Preheat oven broiler to 550ºF.
2 In a small bowl, combine garlic, extra virgin olive oil, and salt.
3 Brush baguette slices with oil mixture and place on cookie sheet. Toast in broiler for 1 to 2 minutes on each side until golden brown. Remove from broiler.
4 On each slice of bread, place 1 tablespoon cooked chicken breast (shredded or cut into strips) and 3 grape halves, then top with 2 tablespoons grated cheese. Broil for 2 to 3 minutes until cheese is melted and bubby. Sprinkle with snipped chives and pepper, if desired.
