Here's a great tasting recipe for a seafood taco you can bring to school, the office, or even to parties.
Yield 5 tortillas Prep Time 10 minutes plus 30 minutes marinating time Cooking Time 12 minutes
2 tomatoes, finely diced
1 mango, finely diced
1 small red onion, finely diced
1⁄4 cup chopped cilantro
1 chili, sliced
salt to taste
1⁄2 cup lime juice
1 kilo tuna fillets
1⁄2 cup vegetable oil
5 teaspoons chili powder
1 11/2 teaspoon cumin
2 teaspoons minced garlic
1 1⁄2 teaspoon paprika
5 flour tortillas, lightly grilled
1 cup iceberg lettuce, shredded
1⁄2 cup grated cheddar cheese
1 cup sour cream (optional)
1 Mix tomatoes, mangoes, onions, cilantro, chili, salt and 3 tablespoons lime juice to make salsa and set aside.
2 Marinate tuna in oil, lime juice, chili powder, cumin, 1 1/2 teaspoon garlic, and paprika for 30 minutes and grill.
3 Layer grilled tuna on top of tortilla, topped with the salsa, lettuce and cheese.
4 Roll tortillas into a cigar. Drizzle top with sour cream, if desired and top with extra minced cilantro and grated cheese.
5 Serve with hot sauce on side.
