Spicy Mexican Chicken/Beef Taco

Spicy Mexican Chicken/Beef Taco

Tacos are very hands-on—to eat and to make. You can easily garnish your own wraps using readily available ingredients; all you need to cook is this chicken or beef filling and Taco Sauce . Serve with some freshly-made Salsa.

Makes enough for 16 tacos  Prep Time 10 minutes  Cooking Time 10 minutes

1/2 kilo lean ground beef or 1/2 kilo boneless, skinless chicken breasts, sliced into strips
1 medium white onion, minced
1/2 teaspoon cumin
2 tablespoons chili powder
3/4 teaspoon cayenne pepper
2 tablespoons vegetable oil
2 tablespoons tomato paste
1/4 cup water
salt and pepper to taste

1  In a large saucepan over medium-low heat, sauté onion with cumin, chili powder, and cayenne pepper in 2 tablespoons vegetable oil for 2 minutes.

2  Stir in the beef or chicken, and cook until the meat just turns opaque.

3  Add tomato paste and water, and give the mixture a good stir. Lower flame to medium-low and let simmer an additional 4 to 5 minutes, until the meat is cooked through. Season with salt and pepper to taste.
