Most people think that vinaigrette is the healthier option. Be careful though, it can contain up to 70-percent fat! The yogurt-based dressing in this salad makes it light and figure-friendly. The strawberry-spinach combo maximizes iron and vitamin C absorption too.
Serves 6 Prep Time 10 minutes
1/2 cup nonfat plain yogurt
1/4 cup orange juice concentrate or juice from 2 oranges
2 tablespoons poppyseeds
1 tablespoon honey (optional)
salt and pepper to taste
12 cups spinach leaves, washed
24 strawberries, halved
1 Make the dressing: In a small bowl, whisk together yogurt, orange juice, poppyseeds, and honey. Season with salt and pepper. Set aside.
2 Prepare the salad: Place spinach leaves in a bowl. Top with strawberries.
3 Toss or drizzle with 12 tablespoons dressing before serving.
