Steamed Shrimps

Dispel manic Mondays by preparing this recipe that’s as easy as 1-2-3: mix-wrap-steam!
Serves 4 Prep Time 10 minutes Cooking Time 25 minutes
4 cups finely chopped or grated young coconut meat (buko)
1 medium onion, chopped
3 tablespoons chopped spring onions
1 cup shelled and chopped shrimps
salt and pepper to taste
4 (6x6-inch) square banana leaves, wilted on low fire
1 In a bowl, mix coconut meat, onions, spring onions, shrimps, and salt and pepper.
2 Place 2 to 3 tablespoons of mixture in the center of a banana leaf.
3 Wrap securely forming a square pouch.
4 Do the same with the rest of the mixture.
5 Steam for 25 minutes. Serve.
Tip! Throw a tablespoon of chopped mint leaves into the mix to add a refreshing flavor to the dish.
