A refreshing salad to have especially during warm evenings.
Serves 6 to 8 Prep time 8 minutes
2 bags assorted salad greens, cleaned and spun dry
2 pieces plums, washed and quartered
1 apple, sliced thinly
10 to 12 pieces strawberries, cleaned and sliced
For the mango vinaigrette
1/2 cup mango puree
1 tablespoon Dijon mustard
a pinch of garlic powder
2 tablespoons white wine vinegar
3/4 cup canola oil
1 Lay salad greens on a platter. Scatter plums, apples and strawberries on top. Chill while making the vinaigrette.
2 Make the vinaigrette by mixing mango puree, mustard and garlic powder in a bowl. Pour into a blender. Add in vinegar and canola oil and blend for 2 minutes. Taste and adjust seasoning by adding salt and freshly ground pepper.
3 Drizzle vinaigrette over salad in desired amount.
