A Pinoy version of this Asian noodle dish courtesy of one Yummy reader.
Serves 6 to 8 Prep Time 20 minutes Cooking Time 15 minutes
2 tablepoons annato (achuete) seeds
1/4 cup sesame oil
4 cloves garlic, chopped
1 large onion, thinly sliced
1/2 cup sweet basil leaves
1 red bell pepper, sliced
1 cup fresh shiitake mushrooms, sliced
1 teaspoon chili powder
1 to 2 tablespoons brown sugar
salt and pepper to taste
1 cup broccoli flowers
1 cup sweet pea (sitsaro)
1 kilo shrimps, deveined
500 grams hofan noodles, boiled and cooked
sesame seeds, optional
1 In a large pan, fry annato seeds in sesame oil. When oil turns orange-y, remove seeds.
2 In the prepared oil, sauté together garlic, onion, basil, bell pepper, and mushrooms. Add chili powder and brown sugar. Season with salt and pepper.
3 Stir in the broccoli flowers and sweet pea.
4 Add shrimps and hofan noodles. Mix well.
5 Transfer to a serving dish and sprinkle with sesame seeds. Garnish with basil leaves.
Prepping tip: Fresh mushrooms are always best but if you can’t find them, it’s okay to use the dried stuff. Soak dried mushrooms for 1 hour, but change the water at least thrice. Don’t forget to strain water before using.
