Serve this dip with grilled seafood while hosting a barbecue party.
Serves 8 Prep Time 5 minutes Cooking Time 15 minutes
4 cups water
1 tablespoon tamarind powder
1 teaspoon miso paste
1/2 cup unsalted butter, cubed
fish sauce (patis) to taste
1 Place water in a saucepan and bring to a boil over medium heat. Dissolve tamarind powder and miso paste.
2 Reduce liquid by half over high heat then remove from heat. When mixture is cool, whisk in the butter piece by piece. If butter does not melt, bring back saucepan over low heat until butter is well incorporated.
3 Season with fish sauce to taste.
