Tomato-Basil Spaghetti



Tomato-Basil Spaghetti

A big bowl of this classic pasta dish is an instant hit.


ServesPrep Time 10 minutes  Cooking Time 15 minutes

 

250 grams spaghetti
3 tablespoons olive oil
1 whole garlic, minced
1 large onion, chopped
1 regular can diced tomatoes, drained with juices reserved
1/2 cup basil leaves, chopped
1/2 teaspoon fresh oregano
3 tablespoons tomato paste
salt and pepper to taste
chopped basil, breadcrumbs, and Parmesan cheese for garnish

 

1  Cook spaghetti in salted boiling water according to package directions. Reserve 1 cup of pasta water.

2  Sauté garlic in olive oil until fragrant. Add onions and cook until soft. Add tomatoes and cook until very soft. Add basil leaves, oregano, tomato paste, juice from the canned tomatoes and 1/2 cup of pasta water. Season with salt and pepper to taste and simmer
until thick.

Toss pasta with sauce until all noodles are well coated. Garnish with chopped basil, breadcrumbs, and Parmesan cheese.
