Serves 3 Prep Time 10 minutes Cook Time 15 minutes
2 eggs
1/2 teaspoon salt
1 teaspoon chopped spring onions
1 tablespoon oil
1 clove minced garlic
1 tablespoon chopped onion
2 tablespoons chopped tomatoes
1 tablespoon margarine
1/4 cup deep-fried liempo
1 slice of ham, chopped
3 cups cooked rice
1/2 teaspoon liquid seasoning
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 In a mixing bowl, lightly beat eggs. Season with salt and sprinkle with spring onions. Set aside.
2 On a nonstick frying pan, heat oil. Pour egg mixture and cook over medium heat. When cooked, slice into strips and set aside.
3 In a medium wok set over medium heat, sauté garlic, onion and tomatoes in margarine. Add liempo, ham, and cooked rice; mix well. Season with liquid seasoning, salt, and pepper. Transfer to plate and garnish with the sliced scrambled egg.
