Serves 6 to 8 Prep Time 20 minutes Baking Time 25 minutes
1 1/2 cups graham cracker, crushed
1/3 cup brown sugar
3/4 cup melted butter
3 eggs
1/3 cup granulated sugar
1/2 teaspoon salt
2 cups milk, scalded
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
For the meringue
2 egg whites
1/4 cup granulated sugar
1 Preheat oven to 350°F. In a bowl, mix crushed grahams, brown sugar, and butter until well blended. Press this crumb mixture into a 9-inch pie plate. Set aside.
2 In another bowl, beat eggs slightly. Add sugar and salt. Gradually stir in the scalded milk. Add vanilla.
3 Strain mixture into the prepared pie crust and bake in the preheated oven for 25 to 30 minutes or until set.
4 Using an electric mixer, beat egg whites until foamy. Gradually add sugar. Beat until stiff and shiny.
5 Once custard sets, spread meringue over pie. Return to oven and bake until meringue turns light brown, about 10 minutes. Cool before serving.
