Light, refreshing, and healthy!
Serves 1 to 2
For the dressing
2 tablespoons sugar
2 tablespoons soy sauce
juice from 2 lemons
1 grapefruit, peeled and segmented
salt and pepper
cilantro- and honey-glazed cashews, roughly chopped
chili pepper flakes (optional)
onion rings (optional)
1 Make the dressing: In a bowl, combine sugar, soy sauce, and lemon juice.
2 Toss grapefruit in dressing; season with salt and pepper. Top with cilantro- and honey-glazed cashews. Sprinkle with chili pepper flakes before serving. To up the Asian flavor, garnish the salad with onion rings, if desired.
