2 tablespoons soy sauce
juice from 2 lemons
1 piece grapefruit, peeled and segmented
salt and pepper
cilantro-and-honey-glazed cashews, roughly chopped
chili pepper flakes, optional
onion rings, optional
Make the dressing: In a bowl, combine sugar, soy sauce, and lemon juice.
Toss grapefruit in dressing; season with salt and pepper. Top with cilantro- and honey-glazed cashews. Sprinkle with chili pepper flakes before serving. To up the Asian flavor, garnish the salad with onion rings, if desired.
