Surprise the whole family with this breakfast treat that will make mornings that much more special.
12 mini asparagus spears
6 cooked bacon strips
1 tablespoon butter
Parmesan or Cheddar cheese for topping
1 Preheat oven to 350ºF. In a large bowl, beat eggs; set aside. Slice asparagus spears into 2-inch pieces; steam.
2 Cut bacon strips into 1/4-inch cubes. Heat butter in a skillet. Pour beaten eggs in and stir. Add steamed asparagus and bacon. Top generously with Parmesan or Cheddar cheese. Bake in the oven until set in the center, about 10 to 12 minutes. Serve immediately.
