Here's a great tasting recipe for a seafood taco you can bring to school, the office, or even to parties.
Makes 5 tacos Prep Time 10 minutes plus 30 minutes marinating time
Cooking Time 12 minutes
For the salsa
2 tomatoes, finely diced
1 mango, finely diced
1 small red onion, finely diced
1⁄4 cup chopped cilantro
1 chili, sliced
salt to taste
1⁄2 cup lime juice
1 kilo tuna fillets
1⁄2 cup vegetable oil
5 teaspoons chili powder
1 1⁄2 teaspoon cumin
2 teaspoons minced garlic
1 1⁄2 teaspoon paprika
5 flour tortillas, lightly grilled
1 cup iceberg lettuce, shredded
1⁄2 cup grated cheddar cheese
For topping
1 cup sour cream (optional)
cilantro , minced
grated cheese
hot sauce, to serve (optional)
NULL1 Make the salsa: In a bowl, mix tomatoes, mangoes, onions, cilantro, chili, salt, and 3 tablespoons lime juice. Set aside.
2 Marinate tuna, lime juice, chili powder, cumin, 1 1/2 teaspoon garlic, and paprika for 30 minutes and grill.
3 To assemble, layer grilled tuna on top of tortilla, top with the salsa, lettuce and cheese. Roll tortillas into a cigar.
4 Drizzle top with sour cream, if desired, and top with extra minced cilantro and grated cheese.
5 Serve with hot sauce on side.
