This tasty dish will surely make you and your family go "mmm." The fruity glaze is so delicious and versatile, you'll want to try it with baked pork chops, too, with Java Rice.
Serves 4 Prep Time 15 minutes Cooking Time 45 minutes
4 large chicken leg quarters, flesh scored diagonally
1/2 tablespoon salt
black pepper to taste
1/4 teaspoon dried thyme
2 tablespoons cooking oil
fresh parsley for garnish
For the glaze
1 cup canned pineapple tidbits
1 cup canned or bottled peaches, diced
1/4 cup pineapple juice
1/2 cup peach syrup (from canned or bottled peaches)
1/2 teaspoon salt
2 tablespoons butter
1/4 cup brown sugar
1/4 teaspoon ginger juice
1 bay leaf
1/4 teaspoon black pepper
2 tablespoons vinegar
2 cloves garlic, minced
1 Preheat oven to 380ºF.
2 Rub chicken with salt, pepper, and thyme; let stand for 10 minutes.
3 Make the glaze: Combine all the ingredients in a saucepan and simmer until consistency is like syrup, about 10 to 12 minutes.
4 Heat a heavy bottomed pan until almost smoking. Add oil and sear chicken on both sides until golden brown. Transfer into an ovenproof dish. Pour glaze over and bake in the oven for 30 minutes. Transfer to a serving dish and garnish with parsley.
