Serve this for breakfast or snack time. We like it sandwiched between buns with cheese, eggs, and ham, a burger patty, sausage, or bacon—the possibilities are endless, really. Have fun in creating your own pairing!
Makes 12
melted butter or oil for greasing
4 medium potatoes
salt and pepper, to taste
1/2 cup grated Parmesan cheese (optional)

1 Preheat oven to 375°F. Grease a baking tray with butter or oil.
2 Grate potatoes. (Make sure to work really fast because they oxidize and turn brown very quickly.)
3 Season with salt and pepper
4 Let stand for 5 minutes, then squeeze out all the liquid.
5 If desired, add Parmesan to add a cheesy flavor to the patties. (This also helps hold the patties together.)
6 Make mounds of the grated potato mixture, each about 3 to 4 inches in diameter. Place on prepared tray.
7 Bake patties in the oven for 20 minutes or until the sides are golden brown. Take out and flip the patties over. Bake for another 15 minutes or until crisp and golden.
