Barbecued Chicken Legs

Barbecued Chicken Legs

Summer is all about enjoying food outdoors. Fire up the barbecue and enjoy this spice-rubbed chicken! Serve this with Stovetop Beans with Bacon Bits on the side.

Serves 6 to 8 Prep Time 15 minutes, plus 6 hours marinating time Cooking Time 10 to 15 minutes

 

For the smoky rub mixture
2 tablespoons sweet paprika
1/2 teaspoon cumin
1 teaspoon cayenne pepper
2 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/22 tablespoons oil
8 chicken drumsticks

 

Make the smoky rub mixture: Combine all the ingredients in a small bowl, forming a paste.

2  Rub marinade all over chicken legs, carefully spreading some underneath the skin. Marinate chicken for 6 hours or overnight.

Grill drumsticks over medium-hot charcoal until juices run clear. Serve with Stovetop Beans with Bacon Bits on the side.

Cooking tip: You can also cook the chicken in the oven, on a rack, at 400ºF for 18 to 20 minutes.
