Wild rice and vegetables make this a healthier rice dish.
Serves 3 to 4
1 teaspoon oil for sauteing
2 tablespoons chopped white onion
2 tablespoons chopped bell pepper
1/2 cup diced beef tenderloin
salt and pepper, to season
1/4 teaspoon paprika
1 cup cooked wild rice
1/4 cup grated mozzarella
1/4 cup grated Cheddar cheese
1 Preheat oven to 375ºF.
2 Heat oil in a nonstick pan. Saute onion and bell pepper until soft. Add beef and cook for 2 to 3 minutes. Season with salt, pepper, and paprika. Transfer to a large bowl. Add wild rice; toss. Mix in mozzarella and Cheddar cheese. Season to taste.
3 Divide rice mixture among 3 to 4 ramekins and top with extra grated cheeses. Bake for 15 to 20 minutes or until cheeses are melted.
Substitution tip: No wild rice? Substitute with 1/2 cup cooked brown rice and 1/2 cup cooked red rice.
