Not into blue cheese? Use other cheeses like gorgonzola or cream cheese.
Serves 4 Prep Time 10 minutes Cooking Time 20 minutes
4 pork chops, each about 2.5-inch thick
4 teaspoons each of paprika, turmeric, and cumin
salt and pepper to taste
3 green apples, sliced paper-thin
1/4 cup blue-veined cheese
buttered yellow corn on the cob, grilled
1 Mix together herbs and seasoning. Rub a tablespoon of the mixed spices on each chop.
2 With a paring knife, slit a pocket in each chop center to hold the stuffing. Fill pocket with layers of apple slices and blue cheese. Grill until done. Serve with corn on the side.
